Description
These vegan pumpkin spice cookies are honestly one of the best cookies ever! They are super soft to the bite, thick, and wonderfully cakey with a cosy flavour of pumpkin spice in every bite you take. It’s not only delicious but easy to make too!

- 2 and 1/2 cups (275g) plain flour
- 1 cup (145g) brown sugar
- 1/2 cup (100g) granulated sugar (reduce the amount to 1/3 cup (65g) if adding vegan chocolate chips)
- 1/3 cup (80g) pumpkin puree
- 1/4 cup (60ml) melted vegan butter
- 3 tbsp soy milk
- 1 tsp pumpkin spice
- 1 tsp vanilla extract
- Pinch of salt
- 1 cup (160g) vegan chocolate chips
Instructions
- In a large bowl, mix the flour, sugars, pumpkin spice, and salt with a whisk until well combined.
- In a separate bowl, mix the melted vegan butter, pumpkin puree, soy milk, and vanilla extract with a whisk until very smooth.
- Add the wet mixture to the dry mixture and stir with a large wooden spoon until well combined.
- If you are adding chocolate chips, add them at this stage and fold them in.
- Cover the bowl with a clean cloth or reusable cling film and rest in the fridge for at least 30 mins.
- Preheat the oven to 180°C(350°F).
- Take the dough out of the fridge after resting. Using an ice cream scoop, scoop the dough and form little balls then place them on the baking tray. Leave a little room next to each other so that they won’t get stuck together in the oven. Press down each cookie lightly.
- Bake for 12-13 mins until the top is golden.
- Take the cookies out of the oven and transfer them onto a cooling rack using a spatula. Let them cool slightly and enjoy!
Notes
Add the chocolate chips at the very last step to prevent them from melting.
You can increase the amount of pumpkin spice up to 1 and 1/2 tsp if you want.
