Vegan lemon blueberry loaf cake
flour sugar lemon juice vegan butter soy milk vanilla baking powder and soda salt cornflour blueberries powdered sugar
Melt the vegan butter, make vegan buttermilk and cornflour mixture
Melt the vegan butter. Mix lemon juice and sy milk for vegan buttermilk, set aside. Mix cornflour and water and set aside. Mix the dry and wet ingredients in a large bowl.
Mix the batter gently
Miix the batter gently with a lage wooden spoon. Be careful not to overmix!
Add the blueberries
Add in the blueberries. Toss them in flour to coat them lightly if using frozen.
Pour into a tin and bake
After mixing the blueberries into the batter, pour it into a loaf tin and bake for 50 mins.
