Vegan apple cinnamon muffins

These vegan apple cinnamon muffins are made with homemade applesauce and lots of juicy and chunky apples. Full of lovely flavour and warm and cosy aroma of cinnamon.

plain flour wholemeal flour maple syrup applesauce apples coconut oil tapioca flour soy yogurt baking powder and soda salt

First step

Mix all the wet ingredients in a relatively large bowl and mix ery well until smooth.

Second step

In a large bowl, mix all the dry ingredients with a whisk, then add the cut up apples and lightly coat them.

Third step

Add the wet mixture to the dry mixture. Stir with a large wooden spoon until they are just combined.

Forth step

Scoop the muffin batter with an ice cream scoop and fill muffin cups to almost full. Top with extra apples and cinnamon sugar. Bake for 25 mis at 180℃.
