Mix the wet ingredients

Mix the pumpkin puree, soy milk, and apple cider vinegar in a jug or bowl until very smooth!

Mix the dry ingredients

Mix all the dry ingredients until well combined!

Make batter

Add the wet mixture to the dry mixture and mix! Don't overmix, just unti combined is good!

Cook on each side for 2-3 mins until golden in colour!
