Today’s recipe is a little special. I recreated lovely vegan chocolate chip oatmeal cookies from my food blogger friend Freya’s Sweeter Than Oats! They are sweet, crunchy, wholesome and super delicious with chocolate chips and roasted walnuts. Honestly one of the best oatmeal cookies I’ve ever had!
When I found this Freya’s recipe I was looking to bake cookies with oats, and it looked so good I had to make them! They turned out super delicious, I devoured them all by myself within a couple of days. These vegan chocolate chip oatmeal cookies are sweet and delicious yet so wholesome that you can even have them for breakfast. So good.
How to make these vegan chocolate chip oatmeal cookies
I used the exact ingredients in Freya’s original post except for the flour, I used rice flour in this recipe to make them gluten-free. All the ingredients I needed to make these oatmeal cookies happened to be in my kitchen already so it was a very good start!
You probably can find most of the ingredients in your kitchen too if not all of them. Here are the main ingredients and how to make these lovely vegan chocolate chip oatmeal cookies.
I used rolled oats from Bob’s Red Mill, this is the oats I use to make my porridge as well as in my baking recipes!
I make my homemade oat flour with the same rolled oats I use for porridge. Freya’s original recipe has a step to blend oats in a food processor but I have my oat flour in a jar at all times in my kitchen so I used it in this recipe for convenience!
You can also buy this nice oat flour which is also by Bob’s Red Mill as well if you want.
I used the combination of brown sugar and granulated sugar as instructed in the original recipe.
This is the only ingredient I changed from the original recipe. I had a bag of rice flour I needed to use up so I used it to make the oatmeal cookies vegan and gluten-free!
I used melted vegan butter instead of whipping room temperature butter. I’ll tell you why I used melted vegan butter later! Earth Balance has a great range of vegan butter to use in recipes that call for vegan butter.
I had some vegan chocolate chips I ordered online in my baking cupboard so I used them in this recipe.
Freya advised me to roast the walnuts so I roasted the walnuts in a frying pan for a good 2-3 mins until they were nice and fragrant!
I mixed ground flaxseed and water to make flax egg and used it in this recipe as a bonding agent as instructed in the original recipe.
Step one: mixing the dry and wet ingredients separately
I did a little slightly different twist in the making process as I used oat flour and melted vegan butter. I used oat flour because I already had it in my kitchen and the recipe was anyway going to call for a part of oats processed finely in a food processor so thought I might as well just use my oat flour I had in my kitchen!
And I melted my vegan butter instead of whipping because… I was too lazy to whip with an electric mixer! And thought, I’ll maybe melt it and mix with the dry ingredients instead. And it worked! Ta-da. Said that you can also whip the butter to make more fluffy cookies too!
So what I did first to make these vegan chocolate chip oatmeal cookies is I mixed the oats, oat flour, rice flour, salt and baking powder, in a large mixing bowl, and also mixed the 2 sugars together. And in a separate bowl I mixed the melted vegan butter, flax egg and maple syrup together.
Step two: mix the dry mixture and wet mixture together
Then in a large bowl, I combined the dry mixture and wet mixture and stirred together with a large wooden spoon to make the cookie dough. At this point, the dough is slightly crumbly but it firmed up once mixed completely.
Step 3: mix in the chocolate chips and roasted walnuts
Once the dough was ready, I added the chocolate chips and roasted walnuts into the cookie dough and mixed them further with a large wooden spoon.
Once it’s all mixed, I then rolled the dough into little cookie balls, line on a baking tray with parchment paper, then baked for 10-12 mins as instructed in the original recipe.

I honestly love love LOVED these vegan chocolate chip oatmeal cookies! They are sweet, crunchy and oaty deliciousness at every bite. As Freya says in the original recipe these oatmeal cookie don’t spread out like my other cookie recipes, so if you want flatter cookies than the ones in the pictures which I made quite chunky and thick, then you can flatten the cookies a little before baking on the baking tray.
