Description
Sweet, moist, and full of cosy apple-cinnamon flavour! This delicious, easy, and simple vegan apple bread is topped with sweet maple icing and is the ultimate treat for breakfast, snacks, or dessert!
Ingredients
For the apple bread
- 2 & 1/2 cups (250g) plain flour
- 3/4 cup (180g) caster sugar
- 1/3 cup (80ml) melted vegan butter
- 1/2 cup (120ml) soy milk
- 1/3 cup (120g) applesauce
- 1 cup (140g) diced apple
- 1 tsp apple cider vinegar
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp baking soda
For the maple icing
- 1/4 cup (45g) icing sugar
- 1 tsp maple syrup
- 1 tsp soy milk
Instructions
- Preheat your oven to 180°C (350°F). Grease a 2lb loaf tin and line it with parchment paper, leaving some overhang on the sides for easy removal.
- In a medium bowl or jug, mix the soy milk and apple cider vinegar to make vegan buttermilk. Set aside.
- In a separate bowl, whisk together the flour, cornflour, cinnamon, baking powder, and baking soda until well combined. Set aside.
- Mix the melted vegan butter, soy milk, applesauce, and vanilla extract very well in a large bowl with a whisk until smooth.
- Add the caster sugar and mix thoroughly, then add the dry mixture and mix with a large wooden spoon or a silicone spatula in a cutting motion until they are just combined.
- Fold in the diced apples until evenly distributed. Do not overmix.
- Transfer the batter to the prepared loaf pan and smooth out the top. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let it cool in the pan for 10 minutes before transferring it to a cooling rack. Let it cool completely.
- To make the maple icing, whisk together the icing sugar, maple syrup, and soy milk in a small bowl until smooth and drizzly.
- Once the apple bread has completely cooled, drizzle the maple icing generously over the top. Slice and enjoy!
Notes
Use fresh, firm, and crisp apples to give your bread the best texture and flavour.
Dice the apples in small chunks to ensure the apples are evenly distributed throughout the apple bread and prevent them from sinking to the bottom.
Always use a digital scale.
If the top of your loaf starts to harden or burn, place a sheet of aluminium foil over the bread halfway through around 30 mins mark
