Description
This vegan peanut butter mug cake is ready in just a couple of minutes with only 8 simple ingredients! Topped with a sweet peanut butter maple frosting, it’s the perfect single-serving treat for peanut butter lovers.
Ingredients
For the peanut butter mug cake
- 2 tbsp plain flour
- 2 tbsp peanut butter
- 1 tbsp caster sugar
- 2 tbsp soy milk
- 1 tbsp vegetable oil
- 1/4 tsp baking powder
For the peanut maple frosting
- 1 tsp peanut butter
- 1 tsp maple syrup
Some crunchy peanuts for garnishing
Instructions
- In your mug, add all of the ingredients for the cake – plain flour, caster sugar, baking powder, soy milk, peanut butter, and vegetable oil. Whisk them all together until smooth.
- Microwave on high for 60 seconds until the cake has risen. If it seems not ready yet, microwave for another 10 seconds and check again. You can do a toothpick test, insert a toothpick in the centre of the cake and if it comes out clean with moist crumb, it’s cooked.
- In a small bowl, mix the peanut butter and maple syrup until smooth and creamy to make the peanut maple frosting. Drizzle the peanut butter frosting on top of the mug cake and sprinkle some crunchy peanuts. Enjoy!
Notes
Microwaves vary, so start with 60 seconds and add time as needed.
Make sure to mix the cake batter thoroughly.
Bake at 180°C (350°F) for 15-20 minutes in an oven-safe mug cup if you want to bake.
Use a 12oz or larger mug cup.
