Description

This vegan plum cobbler has a lovely combination of deliciously tart and juicy seasonal plums and a sweet golden cookie layer, a perfect summer plum dessert to share with your friends and family! It’s super easy to make at home, healthier, and also gluten-free!

Instructions

  1. Preheat the oven to 180°C(350°F).
  2. Quarter the plums. Place the plums in a 24cm(9.5in) baking dish and sprinkle the lemon juice, caster sugar, and cornflour. Mix very gently with a large wooden spoon until the plums are well coated with the ingredients. Set aside.
  3. In a large mixing bowl, mix the rice flour, almond flour, caster sugar, and baking powder together until well combined.
  4. Add the melted vegan butter, vanilla extract, and salt and mix further until it makes a firm dough.
  5. Top the plums with the cookie dough. 
  6. Bake for 20-25mins. The top should look crispy and golden when baked.
  7. Take the plum cobbler out of the oven and let it cool slightly. Serve the cobbler in a bowl, top with some vegan vanilla ice cream and enjoy!

Notes

Pat dry the plums very well to remove any moisture on them before baking.

Mix the plums with other ingredients gently in order to not smash them.
